Very good !!

Today is a special muuuuuuy for the whole family as we celebrate the second birthday of my youngest son…. Congratulations, Paul !!

Given that fell on Wednesday, we met last weekend, Family and friends, to give a party as he deserves and, considering that started at 18 h and ended at 23 h, I can suspect that we all had a great time. Especially the birthday, clear, I could not be more excited about opening presents, eating sweets, and running around and playing around the room.

Today I bring you one of the cakes that I prepared and, so of course I tell, was a complete success and no crumbs were not. While the picture is rather cut regularly (I did it in the middle of the party and in low light and hastily), I think he appreciates a good pint of Baba, spongy and covered by a cream absolutely delicious. The vanilla frosting and the complement of sweets gave a finish very, very rich and, in my opinion, successful for a children's party. Good, That's at least what I think, although, in any case, it is best that you do it you cast one day and prove ;)



  1. Prepare the molds 18 cm., the spread with oil or butter and baking paper forramos.
  2. We make buttermilk. Add half a tablespoon of lemon juice or white vinegar 125 ml. skimmed or semi-skimmed milk and let stand, at room temperature, about 10 minutes.
  3. Sift flour, yeast, baking soda and salt, and reserve.
  4. Mix lemon juice, el buttermilk (we remove it before using) and Vanilla.
  5. To start making the cakes mix, first, zest of lemons and sugar and rub with your fingers to coat well the aroma.
  6. Add the butter, at room temperature and chopped, lime mixture to the previous, and beat with electric mixer, at least 5 minutes.
  7. When a creamy mass has formed in the previous step, we add the eggs, one by one, while we beat constantly.
  8. Now add the flour mixture and buttermilk alternately, starting flour (1/3 thereof) and ending with flour. The mixture of buttermilk, therefore, two times. Continue beating at all times.
  9. Split the dough into the two prepared pans, fairly, and bake, one at, in a preheated oven at 175 ° C, for about 35-40 minutes (Oven depend). Before we test out the stick, checking that comes out dry and clean.
  10. Once out of the oven, after a few minutes of rest, delmoldamos and let cool on a rack.

Syrup, filling (Lemond curd) and coverage:

  1. To make the syrup, Heat the water we, lemon juice and sugar, bring to a boil and then leave on medium heat for about 10 minutes. Let cool before using.
  2. To make the lemon cream filling, finely grate and squeeze lemons. We put in a saucepan, on medium, lemon zest, lemon juice, water, sugar, eggs and cornstarch, stirring constantly. When thickened, remove from heat and let cool.
  3. To make the coverage, In a bowl mix the cheese, yogurt, vanilla extract and beat with mixer. We gradually adding sugar while still whisking all the time until a creamy coverage. Reserve in the fridge.

Assembling the cake:

  1. Cut the biscuits in half and put the first half of the source, lined, in which we present the cake. We apply, with the aid of a brush, a little of the syrup prepared and, then, a generous layer of lemond curd. Repatimos the process to place the last layer of cake, that humedeceremos also with syrup.
  2. With the aid of a knife or a blade length of pastry, apply and extend the coverage of cheese, finally smoothing surface. Decorate with sweets to our liking.
