The cake that I propose today is a typical sweet coffee time in Scandinavia. It is made without yeast, and externally resembles a cake, but its texture is more compact, softer, with a remarkably intense lemon flavor. In my opinion it is simply delicious, in my house think of a special form, inevitably repeat again.. o dos. And is prepared.

 

Elaboration

  1. We covered with paper bake a plum cake mold 23 cm. long.
  2. Heat up a pot with water and, in a bowl, water bath with a water temperature not too high, beat the eggs and yolk. Added sugar, salt and lemon peel, and continue beating.
  3. Sift the flour and incorporate them into the egg mixture and sugar, in batches, and while beating.
  4. On the other hand heat the butter and whisk until a foamy mass. We removed the foam and incorporate the whipped butter to egg mixture and flour, stir gently from bottom to top until blended perfectly.
  5. Tip the dough in pan and bake covered, in preheated oven at 190 º C, about 50 minutes.
  6. As soon as the surface is lightly browned (to 15 minutes, more or less, Cooking) we get the cake from the oven and we make the longitudinal section shown in the picture. The return to oven to complete the 50 minutes.
  7. Once out, let it cool a few 15 minutes before unmolding to cool finish.
  8. To serve cold, sprinkle the surface with icing sugar.
