Today's recipe is special because it is dedicated to someone special and concrete, a fellow blogger who, a large group of bloggers wanted to make a tribute. Sure many already know, I speak of Manu whose blog Catman, Cooking with Manu Catman, is one of the essential references for those who took no time is this and a must for anyone who likes good food. Why this tribute, you may ask? The answer clearly seeing the blogs that have joined the initiative and the affection with which they have (I leave below the list of blogs with recipes respective): Manu is special, is loving, is welcoming, is generous, is a person who everyone wants to feel close to the positive energy that follows, is a great cook and a great person. Each blogger has picked up a recipe for Manu, I chose the delicacy of French pastry, but with your permission, I have changed a bit since its Paris Brest es for Thermomix and mine does not. So I give you two options, best possible, Do not? Nothing, Manu will be por, here I leave my Brest Paris in honor of Manu.

Elaboration

  1. We began to prepare the choux dough. This warmed water in a saucepan with the butter chunks until boiling and the latter is completely broken. The remove from the heat and once we add the sifted flour. Stir with a wooden spoon until it forms a compact ball. Put the saucepan with the ball back into the fire, at low intensity, and we walk around with a spatula for about 10 minutes, need time to dry properly. We removed the pan from the fire and threw the dough in a bowl, where the let cool a few 10 minutes. After that time we add the egg, one by one, and previously beaten, and stirring constantly until all four eggs are fully integrated into the dough and I left it wet. With the help of a wide nozzle piping bag, we 3 consecutive circles on a baking sheet lined with parchment paper, and two circles of dough on the above. Paint the crown surface with beaten egg, we distribute over it and bake almonds, in preheated oven at 180 º C, for about 25 minutes, until it has risen sufficiently and is golden brown. Once out, we let cool before cutting into two parts.
  2. We make the vanilla cream. This boil the milk with the vanilla pod for a few minutes. While in a bowl whisk the egg yolks with sugar until they are showing whitish. We add to the egg mass flour and cornstarch and mix. Then we add the boiled milk without the vanilla, stir well all, and return fire, where the cream stirring constantly keep, and low heat, for a few minutes until we see it has thickened enough. Remove from heat and let cool.
  3. For the custard cream, we beat whipping cream until peaks start to. At that point we add the icing sugar and continue beating until it is sufficiently consistent.
  4. To mount the crown apply, first, vanilla cream on the base of the bottom, helping a pastry bag. Applied over the whipped cream also helping a pastry. Place the top of the crown, sprinkle with icing sugar outer surface and let rest for a while in the refrigerator before serving.

Good, and you see that dessert so easy and yummy. The filling of this delightful French original is a praline cream, but following the recipe I made these creams Manu which are extremely well.
