Very good !!

A few days ago I taught magdlaenas photo of them in Facebook and, as promised, Here's the recipe!.

If you follow the steps blindly, quantities and temperatures, I will leave a eponjosas, Juicy, sooo rich and high muffins. Good, as that you see, …. Were requetebuenas!

I tell them and how.


  1. Skin wash and grate of the two lemons.
  2. Mix flour, yeast and salt, and sift. We added lemon zest.
  3. In a bowl, beat the eggs with the sugar until its volume is doubled.
  4. Added to the above mixture, little by little, and milk, then, oil, while still beating at a rate slower (or whisk).
  5. Now add flour mixture, gradually, and continue beating until the same way to form a homogeneous mixture, smooth. Then, beat a couple of minutes at fastest speed (with mixer again, If we did manually).
  6. Cover the mixture with plastic wrap or a lid ,and let rest in the fridge, at least, one hour (if you want all night).
  7. After the rest period, preheated oven at 250 º C for about 20 minutes.
  8. Take out the mixture from the refrigerator and beat again with a whisk.
  9. Split the dough into the cupcake confetti, filling 3/4 parts. If you want you can put some sugar, for example, on the surface.
  10. Bake, a 210 º C, about 12-15 minutes. If large molds are, like mine, will need a few more minutes of baking, specifically it took me 20 minutes. When you see that have risen enough and already have a golden color, namely, when they think they are already cooked, Open the oven (fearless, not falling ..) and pinchadlas with a skewer to check it out clean and dry; if not, we will leave a few minutes.
  11. Once out of the oven, let cool to room temperature cupcakes.

In closing I also commented that, if you think it is a lot of mass and do not want to do so many cupcakes, the problem can not freeze and use later. I hope you liked it and, if ye do, Let me know! The recipe is based on that of Xavier Barriga.
