Very good !!

Today I bring a cake for my dear “terrine”. The Tarta de Santiago is considered , perhaps, the main representative of the global confectionery Galician.

Sure that'll ever have on more than one occasion and, even, the home will have made. The development does not present too much difficulty but, course, should follow a good recipe to make … The real cake has no flour Santiago (not difficult to see any recipe out there with this ingredient ..), almond only, sugar and egg, usual and add some flavoring as, lemon zest, cinnamon and even some liquor as pomace. Being a cake with PGI can see how it's done in the very B.O.E.

The first cake is documented in Santiago 1577 during a visit to D. Pedro de Port to Santiago de Compostela, and the first recipe is from Luis Bartolomé de Leybar in the book “Confectionery Binder” of 1835.

Elaboration

  1. Prepare a springform pan 23 cm. in diameter and spread with butter and sprinkle with flour. I, also, I covered the base with a circle of parchment paper.
  2. Wash and grate the lemon half, trying not to get to the white.
  3. In a bowl beat the eggs with the sugar until laundered.
  4. On the other hand, almond mix, lemon zest and cinnamon, and we add the beaten eggs. Mix everything with a spatula or whisk, carefully, mixing only, without beating.
  5. Pour the mixture into the prepared pan and bake, in preheated oven at 170 º C, for about 50 minutes, until golden brown and see, if the prick with a skewer, comes out clean.
  6. Once out of the oven, let cool slightly before unmolding. I recommend check that is detached from the mold side, eg passing a knife, before desmoldarla; otherwise, if it is still hot, You can break it. Let cool on a rack.
